Student will learn the art of making the perfect risotto, including mastering the “Mantecatura” to create an authentic and creamy rich dish without the addition of heavy cream. We will be using all scratch ingredients along with professional and traditional techniques that are easily duplicated at home. This is 2 1/2 hour class consisting of demonstration and hands-on participation (what does this mean?)
