This is a comprehensive, 3 day, hands on Certificate Course in mastering the art of pasta making.
Students will learn the fundamentals of Pasta Making including:
- Choosing flour and ingredients
- Dough formulas and methods
- Rolling Pin Sfoglia
- Hand Forming
- Machine Forming
- Sauces, Fillings and Condiments
- Common cooking techniques
- Recipe costing
- Pasta Regions and History
Pasta Styles will include:
- Hand Rolled Egg Pasta
- Hand Formed Eggless Pasta
- Machine Formed Pasta
- Pasta shapes long and short
- Filled Pasta and Ravioli
- Gnocchi and Dumplings
Those who successfully complete the course will have the knowledge necessary to produce superior pasta and the tools to start or improve any food business.
A practical exam and short multiple choice exam is required to earn your Master Pastaio Certificate that you may proudly display in your place of business or home.
You must attend all three days to be eligible for certification.
