Students will learn how to create a variety of bakery-favorite breakfast pastries completely from scratch using professional techniques adapted for the home baker. We’ll explore the fundamentals of enriched doughs, pastry shaping, proofing, glazing, and finishing while creating soft cinnamon rolls, seasonal fruit Danish, and yeast-raised doughnuts. This 2½-hour class includes demonstration along with some hands-on student participation (what does this mean?).
Lessons Include:
- Preparing enriched sweet dough from scratch
- Proper yeast handling, fermentation, and dough development
- Transforming one dough into cinnamon rolls, yeast-raised doughnuts, and danish
- Shaping and rolling classic cinnamon rolls
- Professional doughnut cutting, proofing, and frying techniques
- Creating seasonal fruit and cream cheese Danish
- Finishing pastries with vanilla glaze, chocolate icing, and cinnamon sugar
- Tips for recreating bakery-quality breakfast pastries at home
A generous sampling of all the foods prepared in class will be provided, along with some tasty bites.
