Students will learn how to make traditional, authentic NYC bagels completely from scratch! We will be using all scratch ingredients along with traditional and professional techniques that can be easily duplicated at home. This is a 2 1/2 hour class consisting of demonstration and some hands-on participation (what does this mean?).
 
A generous sampling of all the foods prepared in class will be provided. + Bagels to take home.

 

Lessons Include:

  • Mixing and kneading traditional bagel dough
  • Choosing the Correct Flour
  • Managing fermentation and proofing for flavor and texture
  • Hand-shaping bagels using classic techniques
  • Boiling bagels for proper crust and chew
  • Baking for optimal structure and finish
  • Creating custom bagel topping blends
  • Flavoring cream cheese for classic and specialty schmears
  • Troubleshooting common bagel-making challenges
