Students will learn how to make  amazing regional Italian Breads. We will be using all scratch ingredients and professional techniques, that are easily duplicated at home.
This is a 2 1/2 hour class that consists of demonstration and some hands on participation (what does this mean?).
A generous sampling of all the breads made in class will be served , along with some savory snacks and accompaniments .
 
Lesson include:
  • Choosing the correct flour and other ingredients.
  • Kneading and mixing techniques. Direct and Indirect.
  • Using a preferment, biga and poolish.
  • Proper fermentation / time and temprature.
  • Bread Shaping and forming techinqes .
  • Baking methods , time and tempratures.
  • and much more!
